Easy! Delicious! Mapo Eggplant

My daughter and husband said these eggplants were "Too delicious!!" Easy to make but delicious!

Ingredients: 2-3 servings

Japanese eggplant
2 (large)
Ground pork
120 g
Carrot
1/2 can (40 g)
Green bell peppers
2
Sesame oil
As needed
Grated garlic
A little (or about 2 cm out of a tube)
Grated ginger
A little (or about 2 cm out of a tube)
Katakuriko slurry
As needed
For the seasoning:
Tianmianjiang
1 1/2 tablespoons
Soy sauce
1 teaspoon
Chicken bone soup stock powder
1 teaspoon
Water
1/2 cup
Doubanjiang (for a spicy kick)
1 teaspoon

Steps

1. Fry the bell peppers and carrots over high heat then remove from the pan once done.
2. Similarly, fry the eggplant on high heat and then remove from the pan.
3. Heat sesame oil in a pan and add garlic and ginger to add some flavor to the oil. Add the ground meat and fry.
4. Add the seasoning ingredients (pre-mixed) and fry to let the meat soak in the taste of the seasoning well.
5. Add the previously fried vegetables then add the katakuriko slurry to make the sauce a little bit thicker. Done.
