✽Easy Simmered Mackerel in White Miso✽

Our family uses white miso for this classic recipe.
I aimed to re-create the delicious mackerel in miso sauce that's served at school lunched.


Raw mackerel
4 to 5 slices
For the broth:
Grated ginger (pre-grated is fine)
about 2 teaspoons (or 5 cm from a tube)
Cooking sake
1 tablespoon
Soy sauce
A little less than 2 tablespoons
1 tablespoon
White miso
3 tablespoons


1. Wash the surface of the mackerel skin and drain it with a paper towel. Combine all the broth ingredients in a pot and mix well until the white miso dissolves.
2. Add the mackerel and simmer. Skim the scum off when it simmers. Cover with a piece of aluminium foil and cook over low to medium heat.
3. Simmer for 20 minutes. Keep simmering until the broth has thickened.
