Miso Stir-fry Carrots

Just stir fry some carrots shredded with a vegetable slicer and you have a dish done in 2 minutes. They are seasoned with miso and butter. It's a great dish to prepare if you're strapped for time and need another plate to put on the table.

Ingredients: 2 servings (small sides)

100 g
White sesame seeds
To taste
Garlic (grated)
1 clove
Margarine (or butter)
1 tablespoon
Blended miso
1/2 tablespoon
Soy sauce
1 teaspoon
1 teaspoon


1. Shred the carrot using a vegetable slicer or mandoline. Combine the [A] ingredients and mix well.
2. Heat margarine in a frying pan. Add the carrot and stir fry over medium heat until wilted.
3. Add the combined [A] ingredients. Stir fry for 1 minute and turn off the heat. Transfer to serving bowls, sprinkle with white sesame seeds and it's done.
4. The slightly al dente carrot and the garlic flavor will boost your appetite.

I want to eat even a small amount of carrot every day, so I've been experimenting with various small side dishes using grated or shredded carrot.
