A Little Bit Chinese! Fluffy Eggs with Shiitake Mushrooms

Fluffy eggs with an aromatic shiitake mushroom soup base and sesame oil~ ♪ It remains soft and fluffy even after it's cooled.

Ingredients

Shiitake mushrooms - thick ones are best

Eggs
3
Katakuriko
1/2 teaspoon
Salt
1/4 teaspoon
Dashi stock granules
1/4 teaspoon
Water
3 tablespoons
Sesame oil for stir-frying
good amount

Steps

1. Roughly chop the shiitake mushrooms.
2. Dissolve the katakuriko in water.
3. Beat the eggs.
4. Combine the dissolved katakuriko from Step 2 and the eggs from Step 3. Add the dashi stock granules.
5. Heat the sesame oil in a pan and cook the shiitake mushrooms.
6. When the mushrooms are cooked, add the egg mixture from Step 4 and plate when the eggs are still soft (just enough to cook through with the residual heat).
7. Your fluffy eggs are done!
