Broccoli and Cheese Fritters

These fritters have a light and airy batter. The broccoli won't spit at you even if you don't parboil them in advance, so they're easy to make.


100 g
★ Eggs
2 small/medium (or 1 large)
★ Flour
4 tablespoons
★ Baking powder
1/2 teaspoon
★ Salt and Pepper
To taste
Sliced cheese
2 slices (about 16 g)
Oil for deep frying


1. Cut the broccoli into small florets, rinse and pat dry.
2. Put the ★ ingredients in a bowl and mix. Cut the cheese into 5 mm pieces, and scatter into the batter.
3. Coat the broccoli in the batter. Heat oil in a frying pan to 170°C.
4. Using 2 spoons, scoop up the batter and broccoli with one, and gently drop into the hot oil with the other.
5. The fritters should look like this.
6. When all the broccoli is in the oil pot, pour the remaining batter over the broccoli fritters.
7. When the bottoms have lightly browned, flip the fritters over. When they make a sizzling sound when squeezed with cooking chopsticks, they are done.
8. Drain off the oil, and serve.

I wanted to make a unique dish using broccoli. Serve as drinking appetizers, for dinner, or pack in your bento.
