Healthy and Easy Sweet Potato Bites

I used margarine and milk instead of butter and heavy cream. So they are healthy! You don't need to strain the potatoes, so it's easy to make.

Ingredients: about 10 pieces

Asian sweet potato
1 (300 g)
Egg yolks
2
Honey (or sugar)
50 g
Milk
1 tablespoon
Margarine
20 g
Vanilla extract
3 drops

Steps

1. Peel the potato, cut into 1 cm slices, and soak in water. Drain and place in a heatproof plate and cover with plastic wrap. Microwave until softened.
2. White the potatoes are hot, mash with a pestle until there are no lumps left.
3. Add all the ingredients, reserving 1 tablespoon of egg yolk, and combine well.
4. Shape as you like. If the paste sticks to your hands, chill the mixture in the refrigerator before working them again.
5. Dilute the reserved egg yolk with a little bit of water and brush on the potato bites.
6. Bake in the 220℃ oven for about 20 minutes.
7. Round shapes are cute too.
