Drain the tofu very well. One 400 g block will become about 250 g to 300 g.
Put the onion in the bowl of a food processor and switch on! When it's chopped up add all the other ingredients and turn on the switch! Taste and adjust the seasoning.
When the mixture turns into a paste, adjust the texture. Add panko if it's too soft, and add a bit of water if it's too stiff. It should be about the consistency of uncooked hamburger. Divide into bite-sized portions.
Form the portioned paste into oval shaped patties, deep fry in oil and they are done. If you press the back of a fork into them before frying they'll look like chicken nuggets.
This is after I've portioned the paste from Step 3 with a small ice cream scooper into bite-sized pieces.
I deep fried them at 180°C.
Story Behind this Recipe
I don't really like buying readymade stuff for the things that I serve to my kids everyday. So I sort of fumbled my way through things as usual, to come up with this recipe.
Having a little ice cream scooper is really handy when making bite-sized croquettes or hamburgers. I got mine at a 100 yen store. If you're not too concerned about the shape of the nuggets you can use a spoon instead, in which case it'll go even faster. I think these are tastier if you add plenty of spices.
