Silken Tofu & Bean Sprout Miso Soup

This recipe uses quick cooking ingredients. The bean sprouts really do their job well.


Silken tofu
1/4 block
Bean sprouts
1 handful (maybe that's too much...)
to taste
Your usual dashi stock
to taste
Any type of onion or myoga ginger
to taste
If available, add aburaage cut into 3-cm wide pieces


1. If using aburaage, lightly wipe off the oil and cut into pieces. Add to the dashi stock and let it boil for a bit. Then proceed to Step 2.
2. Dissolve the miso into the dashi stock. Add the diced tofu and heat it up without letting the miso boil.
3. When the miso is hot, add the rinsed bean sprouts and simmer. Optionally, add leeks or myoga ginger as a topping, and it's finished.
