Easy Basic White Sauce

Nutmeg is the key! This is a rich, flavoursome white sauce which you can use in gratin, and baked rice or pasta dishes.

Ingredients

Unsalted butter
60 g
Flour
60 g
Milk
1000 ml
Bay leaf
1
Nutmeg
a small amount
Heavy cream
200 ml
Consomme stock granules
1 1/2 tablespoons
Salt
to taste

Steps

1. Slowly melt the butter in the frying pan over a low heat. Add the sifted flour and fry, making sure it doesn't burn.
2. Stop the heat. Add the warmed milk in two batches, mixing quickly with a whisk after each addition.
3. Add the bay leaf and nutmeg, and simmer for about 5 minutes over a low heat. Add the heavy cream and consomme, season with salt, and it's done.
