Melty Cheese, Pork and Bean Sprout Tonbeiyaki-style Omelette
A tonbeiyaki style omelette filled with lots of bean sprouts. The cheese comes melting out of it! Very hearty! Tonbeiyaki is an omelette or pancake with pork that is a regional speciality of the Kansai area.
1/2 teaspoon of katakuriko and 1 teaspoon of water
a small amount
Mayonnaise and Japanese Worcestershire-type sauce
Wash the bean sprouts and drain well in a colander or sieve. Cut the pork into 1 cm wide pieces.
Dissolve the katakuriko in water in a large bowl, break in an egg and mix well.
Stir fry the pork until cooked. Add the bean sprouts and stir fry. Season with salt and pepper.
Add the stir fried pork and bean sprouts to the beaten egg mixture, and mix well.
Return to the frying pan and spread it out. Put on the cheese.
Cook over medium heat. When the egg is soft set, fold it over and transfer to a serving plate. Top with mayonnnaise and Worcestershire-type sauce and it's done.
Story Behind this Recipe
The recipe uses a lot of bean sprouts for a filling dish.
Don't stir fry the bean sprouts for too long in step 2. In step 3, if you return the entire contents of the bowl to the frying pan, it may be too much and may overflow the pan. You can make half the contents of the bowl at a time - it may be neater tha way! Add cheese to taste.
