Rice Flour Madeleines

These rice flour madeleines are aromatic of butter.


Rice flour
130 g
3 large
100 g
120 g
Baking powder
2/3 teaspoon
(Vanilla extract
as needed)


1. Beat the eggs in a bowl, add the sugar all in one go, and whip.
2. Whip until the mixture forms a thick ribbon when the whisk is lifted.
3. Spread the rice flour and baking powder in the bowl, and fold in with a wooden spoon.
4. Add the butter in 3 - 4 batches by pouring on the wooden spoon, and mix quickly. Then add vanilla extract (optional).
5. Pour into the cupcake cups and bake for about 25 minutes at 170°C (your oven may vary, so check while baking.)
