Tofu Scones Made with Pancake Mix

You only need pancake mix and tofu! It takes 3 minutes for the preparation, and 15 minutes in the oven. They are crispy on the outside, and chewy on the inside!

Ingredients: 4

Pancake mix
100 g
Tofu
50 g (half the amount of the pancake mix)

Steps

1. Add the pancake mix into a bowl, and crumble in the tofu using your hand. Knead them, and bring the mixture together into a ball.
2. Divide the dough into 4 portions, roll into balls, and flatten. Bake in the preheated oven for 15 minutes at 180℃.
3. You can eat as is and still taste the sweetness, but jam goes well with them. I like putting vanilla ice cream in the middle.

Story Behind this Recipe

I successfully made scones using a banana and pancake mix (Recipe ID: 1411935), so I tried making them using leftover tofu which was sitting in the fridge! They turn out crispy on the outside and chewy on the inside.
