Ramps Stir-Fried with Mayonnaise and Ponzu

I made a mayonnaise and ponzu stir-fry with ramps.

Ingredients: 2-3 servings

Ramps (or alpine leek)
3-4 bunchs
Mayonnaise (1st addition)
1 tablespoon
Mayonnaise (2nd addition)
1 tablespoon
1 tablespoon
Bonito flakes and white sesame seeds
as needed


1. Thoroughly rinse the ramps, drain, and chop the large stalks into desired lengths.
2. Place 1 tablespoon mayonnaise in a frying pan and heat over medium heat.
3. Once the mayonnaise melts, add the ramps and stir-fry.
4. Once the ramps are cooked through, and the stalks are tender, then reduce the heat to low. Add the second tablespoon of mayonnaise and the ponzu, briefly stir-fry, then it's ready.
5. Garnish with bonito flakes and sesame seeds to taste.
