Alpine Leek and Bean Sprout Soup

I made alpine leeks into a Chinese-style soup so children could eat them as well. Alpine leeks and ramps have a really strong, characteristic flavor to them, but this recipe makes them really easy to eat!

Ingredients: 4-6 servings

Alpine leek (or ramps)
3-4 stalks
Bean sprouts
1 bag
Sesame oil
1 tablespoon
White sesame seeds and bonito flakes
as desired
☆ Chinese Chicken stock powder
2 tablespoons
☆ Soy sauce
20 ml
☆ Sake
20 ml
☆ Miso
1 teaspoon
☆ Grated ginger
a small amount
1000 ml


1. Refer to the Recipe ID: 1116286 for how to prepare the alpine leeks.
2. Heat the sesame oil in a pot and sauté the bean sprouts and alpine leeks. I usually rip the alpine leeks apart into smaller pieces, but you can chop them up into whatever size that you like.
3. Once the vegetables are tender, pour in the water and bring it to a boil. When it comes to a boil, add the ☆ seasonings and simmer for 5 to 10 minutes and it's done.
4. Sprinkle on white sesame seeds or bonito flakes if desired.
