Farmhouse Recipe: Simmered Sauerkraut

This is a German recipe for sauerkraut, onions and sausages simmered together. It appears on Christmas menus too.

Ingredients: 4 servings

200 g
Wiener sausages
100 g
Butter (or margarine)
1 tablespoon
Salt and pepper
a small amount
[A] ingredients:
500 ml
Soup stock cubes
2 * - chop up finely
Bay leaf


1. Rinse the sauerkraut quickly. Slice the onion thinly.
2. Heat the butter in a pan over a medium heat, add the onion and sauté until it's wilted. Add the sausages and sauté quickly.
3. Add the sauerkraut and the [A] ingredients next, and simmer gently over a low heat for 20 minutes. Season with salt and pepper at the end and it's done.
