Broccoli and Scrambled Egg Mayonnaise Salad

A salad of microwaved broccoli, scrambled egg and grated cheese with mayonnaise. Simple and colorful, this is great for bentos.

Ingredients: 4 servings

1 head
A) Eggs
1 and 1/2 teaspoons
Salt and pepper
a small amount
B) Mayonnaise
4 tablespoons
Grated cheese
3 tablespoons
Lemon juice
1 tablespoon
Krazy Salt
a small amount


1. Cut up the broccoli into florets, add 3 tablespoons of water and microwave for 4 minutes at 600W. When cooled, squeeze out the water.
2. Mix the A) ingredients and make scrambled egg on the firm side. Let cool.
3. Mix the B) ingredients in a bowl, add the broccoli and scrambled egg and mix. If you have time, let it sit for 30 minutes to 1 hour to allow the flavors to blend in.
