Cut the chicken into bite-sized pieces, and place in a plastic bag. Pre-season with salt, pepper, and grated cheese. Inflate the bag with some air and shake its contents well.
Let it sit for a while, and add the flour and basil. Shake well in the same way as Step 1.
Heat the olive oil in a frying pan, and fry the chicken over medium-high heat. Once browned, flip.
When the surface of the chicken pieces have evenly changed colors, turn down the heat. Lid and steam-fry.
When cooked through, remove the lid. Fry until golden brown, and you're done.
Story Behind this Recipe
The expiration date of the grated cheese was getting close, so I came up with a dish that would use a lot of it.
Using olive oil instead of vegetable oil makes the dish more delicious. If you use a lot of grated cheese and basil, they can make the taste too strong and rich, so I used just a small amount here, but please feel free to add some more if you'd like.
