For Your Bento! Sweet and Sour Fishcake Sticks and Eggplant

Here's one more item for your bento. It is a quick-prep Japanese dish.

Ingredients: About 2 to 3 servings

Chikuwa
1 to 2
Eggplant (small Japanese variety)
1/2 to 1, depending on the size
Sugar
1 teaspoon
Soy sauce
1 teaspoon
Water
1 tablespoon
Vegetable oil or sesame oil
as needed
Sesame seeds
to taste
Ichimi spice or shichimi spice
to taste

Steps

1. Cut the chikuwa into about 6 pieces. Chop the eggplant into similar sized pieces.
2. Add oil to a small pot, lightly sauté, then add sugar, soy sauce, and water, and continue sautéing until the water content is completely reduced.
3. Too much water will evaporate over high heat, so heat over medium heat.
4. Sprinkle sesame seeds and it's ready to serve.
5. Sprinkle ichimi or shichimi spice to taste.
