Light and Crispy Tempura Batter

There's no need to buy tempura flour, make your own! Serve light and crispy tempura prepared with ingredients you have in your kitchen.


☆ Plain flour
100 g
☆ Katakuriko
10 g
☆ Baking powder
5 g
☆ Vinegar
15 ml
☆ Ice cubes
50 g
☆ Water
100 ml
☆ Salt
to taste
Whatever you want to deep fry
as needed
Oil for deep-frying
as needed


1. Prep all the ingredients you want to fry. Chill in the refrigerator until cooking.
2. Briefly mix the ☆ ingredients together roughly (work briskly... there should be some lumps!)
3. Heat oil for frying. It's hot enough when a drop of batter sinks to the bottom and then immediately rises to the surface.
4. If the ingredients for frying are slightly wet, pat dry. Dip in the batter and deep fry. When they have turned a nice color, they're done.

At the request of my husband, I challenged myself to make tempura batter with ingredients we had on hand, since buying tempura flour is a waste.
