Bamboo Sheath Clear Soup

If you boil an entire bamboo shoot, you can even eat the softened bamboo sheath. Or just use bamboo shoots packed in water.


Bamboo sheath
From 1 bamboo shoot
Dried wakame seaweed
4 tablespoons
※ Dashi stock
4 to 5 cups (800 to 1000 ml)
※ Sake
4 tablespoons
※ Mirin
1 teaspoon
※ Salt
1/2 teaspoon
※ Usukuchi soy sauce
2 to 3 tablespoons


1. Cut the bamboo sheath into 2 cm long pieces.
2. Add all ※ ingredients in a pot and bring it to a boil.
3. Add the bamboo sheath and bring to the boil again. Add dried wakame seaweed and it's done.
