You can spread this dip mixture as-is on crackers or bread, and if you bake it it turns into a gratin of sorts for some reason.
I wanted to come up with an onion dip that could be spread on crackers and so on. That resulted in this recipe.
There are two reasons to cook the onion. The first is to get rid of the harshness and to bring out the sweetness. The other is to melt the cream cheese with the heat of the onions.
