White Chocolate × Matcha Muffins

You can enjoy the crunchy feel of the white chocolate topping and the aroma of the matcha in these muffins.

Ingredients: 6 muffins

Unsalted butter or margarine
80 g
Granulated sugar (or caster sugar)
80 g
30 g
White chocolate
as desired
Dry ingredients
Cake flour
100 g
Baking powder
3 g
Matcha (or aojiru)
9 g


1. Roast the walnuts for 5 minutes at 170°C. Then, put the butter in a heatproof bowl and put it in the oven (melt in residual heat once the walnuts are done).
2. Break up the chocolate bar into pieces.
3. Combine and sift the dry ingredients.
4. Mix the butter until it has the consistency of mayonnaise, then add the sugar in two batches and mix.
5. Add the beaten egg a little at a time, and mix everything together. Preheat the oven to 180°C.
6. Once it's mixed, add in half of the sifted dry ingredients. When the batter is mixed in, add the rest of the dry ingredients and mix again.
7. Add half of the walnuts and chocolate and mix.
8. Pour the batter into cups and top them with the remaining white chocolate pieces. Bake for 25 minutes at 170°C and they're done!
