Atsuage Broccolini Soboro An

Atsuage Broccolini Soboro An

A side dish with a gentle flavor. I used broccolini for a spring-like feel.

Ingredients: 3-4 servings

Atsuage (silken)
70 g
Minced chicken
100 g
Dashi stock
400 ml
1 tablespoon
1 tablespoon
Usukuchi soy sauce
2 tablespoons
1 piece
a pinch

1. Cut the atsuage into whatever size you prefer. Cut the broccolini into 1 cm pieces. Mince the ginger.
2. Put the atsuage, dashi stock, sugar, mirin, soy sauce, and ginger in a pot and heat on high.
3. Once it's come to a boil, add the minced chicken while crumbling it. Then boil on low-medium heat for 10 minutes.
4. Add a little water to the katakuriko and mix well. Add to the soup stock in Step 3, mixing as you add, and be careful to avoid lumps. This will give thickness.
5. Lastly, add the broccolini and once it's boiled, it's complete.

Story Behind this Recipe

A different take on potato soboro an sauce.
Since the greens of the broccolini are very fresh and beautiful, I tried adding it to soboro an sauce.
