Egg and Butter Free Tofu Cookies

A simple cookie made with tofu. Not too sweet, and easily made with no eggs or butter.

Ingredients: 30 cookies

Tofu (silken)
100 g
30 g
Vegetable oil
50 ml
Cake flour
130 g
Baking powder
1/2 teaspoon


1. Drain the water from the tofu and whisk until it is smooth without lumps.
2. Add sugar and mix well.
3. Add oil and stir well until it is all blended together.
4. Add flour and baking powder and mix using a cutting motion with a spatula.
5. Line a baking tray with parchment paper, roll the dough into balls, line them up, and bake for 15 minutes in an oven pre-heated to 390°F/200°C.

I wanted to use tofu to make cookies, but it was a pain to soften the butter, so I tried with oil instead.
