Vegetarian Dan Dan Noodles with Vegetarian Miso-Meat Sauce

Even vegetarians want to enjoy dan dan noodles in thick white sesame soup. This can be made in one pot.

Ingredients: 1 serving

☆ Water
200 ml
☆ Soy milk
200 ml
☆ Garlic (minced)
1 small clove
☆ Ginger (minced)
1 slice
☆ Kombu based dashi stock granules
1/2 teaspoon
★ Sesame paste
1-2 teaspoons
★ White miso
2 teaspoons
Cellophane noodles
1 serving
Leafy vegetables (bok choy, etc)
as desired
Vegetarian Miso-Meat Sauce (Recipe ID: 1399568)
1 tablespoon
Green onion or scallions
to taste


1. Heat the ☆ ingredients on medium to create the soup. Once it's about to come to a boil, reduce to low heat and add the ★ ingredients.
2. Add the noodles and leafy green vegetables, then pour into a bowl. Top with the vegetarian miso-meat sauce and green onions and enjoy.
3. Top with sesame oil and black pepper if desired.
