Shrimp and Avocado Pesto

I love this pasta restaurant's popular dish!
So, I came up with an easy way to make it with ingredients I had at home.

Ingredients: 1 serving

100 g
Olive oil
3 tablespoons
Garlic (finely chopped)
1 clove
(Frozen peeled) shrimp
Basil pesto
1 tablespoon
Butter, salt and pepper
a small amount of each
Grated cheese
to taste


1. Cut the avocado into chunks. You can leave the peeled shrimp frozen.
2. Begin boiling the pasta (I do it in the microwave). Later, it will heat up easily, so I think it's better to do it until just cooked.
3. Put the olive oil and garlic in a frying pan and sauté over low heat until fragrant.
4. Add the avocado and shrimp. The frozen shrimp might release a bit of water but don't worry about it.
5. Once the shrimp has cooked, add the basil pesto and mix together. Add the butter, salt, and pepper to taste. If too much of the moisture evaporates, add some pasta water.
6. Add the boiled pasta. Sprinkle cheese on top while mixing the pasta with the sauce. Once evenly coated, let it cook.
7. Transfer to dishes and serve. Sprinkle cheese on top if desired.
8. The saltiness of the basil pesto will vary by brand, so adjust as necessary.
