Brioche-style Pancake Mix Bread

You can bake soft, sweet, cake-like bread in a bread maker. A slightly indulgent brioche-like bread.

Ingredients: makes 1 loaf

Bread (strong) flour
150 g
Pancake mix
100 g
30 g
3 g (if salted butter, 2 g)
Skim milk (optional)
7 g
Dry yeast
3 g
30 g
Coffee creamer
20 ml (4 single-serving containers)
180 ml of the egg, coffee creamer, and milk combined


1. Place the dry ingredients except for the yeast in the bread case. Place the butter on top, and pour in the milk, coffee creamer, and egg around it.
2. Set up the bread case and the dry yeast in the bread maker and start the machine on the white bread course with a medium crust.
3. Done.. If you're not going to eat it immediately, let cool on top of a rack, etc. Once it cools, wrap it up to keep it from drying out.
4. It will maintain a soft texture even after it cools. It's delicious eaten as-is, or with maple syrup or butter.

Story Behind this Recipe

I tried adding some leftover pancake mix and ended up with a soft, sweet, brioche-like bread, similar to that of our neighbourhood bakery. Brioche usually has plenty of butter, but by using coffee creamer I've reduce the butter.
