Maitake Mushrooms and Nori Seaweed Tsukudani

I made 'Tsukudani,' a seaweed paste with nori and my favorite maitake mushrooms. It is so delicious that it has now become our family's dish!

Ingredients: 4 servings

Nori seaweed
Maitake mushrooms
2 packs
White sesame seeds
a small amount
● Water
100 ml
● Mirin
100 ml
● Dashi stock granules
1 teaspoon
● Soy sauce
3 tablespoons
● Sugar
1 tablespoon
● Salt
a small amount


1. Remove the stem ends of the maitake mushrooms, and shred thinly. Add the ● ingredients, finely torn nori seaweed, and mushrooms into a pot, and cook over medium heat.
2. Cook and mix with a spatula. When the sauce has nearly evaporated, transfer to a plate, sprinkle with white sesame seeds and it's done.
3. Top over rice.
