Leftover Hayashi sauce (you can also use readymade sauce)
3 ladles worth
Hot cooked rice
2 rice bowls worth (300 g)
Cheese for melting
Warm leftover Hayashi sauce and mix with warm rice. Put in a heat-proof container greased with butter and make a dent in the middle.
Put cheese around the dent and break the egg into the dent. Bake in a toaster oven. When cheese is browned it's ready to serve.
It's difficult to tell from the photograph, but the soft cooked egg is very creamy. I personally recommend using a lot of mozzarella cheese.
Story Behind this Recipe
I copied the famous baked curry from Mojikou in Fukoka prefecture. I happened to have leftover Hayashi rice and my husband was out for drinks that night, so I came up with this recipe to have an easy dinner with my daughter.
If there's too much Hayashi sauce it gets too watery so use rice to adjust the consistency. Be careful not to burn yourself when taking the the container from the oven. When baking in the oven, bake at 250℃.
