French Toast with Banana Soymilk

This is a sweet, healthy breakfast fragrant of maple and banana.

Ingredients: for 2 servings

French toast
Pullman loaf cut vertically into 6 slices
2 slices
Soy milk
100 ml
Egg
1
Pal Sweet (aspartame sweetener)
1 tablespoon
Maple essence or vanilla extract
a little
Banana sauce
Banana
1
Pal Sweet (aspartame sweetener)
1 teaspoon
Rum
1 teaspoon
Lemon juice
1/2 teaspoon
Maple essence or vanilla extract
a little
Other:
Butter
10 g
If using sugar instead of sweetener, double the amount (2 teaspoons)

Steps

1. Whisk the egg into a bowl, add the sweetener, soy milk and a little of the maple essence, and mix thoroughly.
2. Cut the bread slices into 2 to 4 pieces, and soak in the solution made during Step 1. Butter a heated pan and cook the bread on both sides.
3. Slice the banana, put the slices in a heatproof container and sprinkle with lemon juice. Add in the rest of ingredients and microwave for 1.5 minutes without covering.
4. Spread plenty of banana sauce on the toasted bread.

6. Use 2 sheets of bread from a loaf sliced into 6. If using a loaf sliced into 5, use 1.5 sheets, or increase to 3 sheets with double the portion of egg mixture.
