Crunchy Cocoa Okara Sticks

These have tons of crunch! These baked okara snacks are even crunchier than biscotti and don't become stale easily. They are oil and egg-free.

Ingredients: 1 baking tray

Fresh okara
100 g
*Bread (strong) flour
80 g
*Hot chocolate (or sweetened cocoa)
60 g
a pinch
Dried fruits (orange etc.
15 g
20-30 g
Citrus jam (apricot, marmalade, etc.)
50 g
Soy milk
20-30 g


1. Chop the dried fruit and walnut into easy to eat pieces (about 5 mm).
2. Combine and sift the * powdered ingredients. Mix together Step 1 and cover completely with the flour.
3. Add the okara and stir well to get rid of lumps.
4. Add the jam to the soy milk and mix well to dissolve.
5. Add the liquid from Step 4 to the powdered ingredients from Step 3 and blend thoroughly. Bring together to form one lump. Preheat the oven to 180°C for 20 minutes.
6. Place the dough on a sheet of parchment paper. Wet your hands and spread out the dough to form a 5 mm thick square.
7. Bake on the top rack of the 180°C oven. Remove from the oven and let cool.
8. Cut into 5 mm wide sticks. Lower the oven temperature to 160°C and bake again for 10 minutes. Let cool while still on the baking tray.
9. They will become very crunchy once completely cooled. If they harden too much, lightly microwave to soften.
10. I recommend dipping these into a drink like coffee, similar to how biscotti is eaten.

Story Behind this Recipe

I made these because someone on a diet told me they've been longing to have a snack with texture and asked me to make something.
These okara cookies don't become stale easily even after time passes. I came up with this good idea as I was repeatedly trying to make okara biscotti.
