Wash the garlic scapes. Chop the leaves into 3-4cm pieces and the stems diagonally. Slice the pork into easy to eat pieces. See step 4 for tips on using the mushrooms.
Coat a pan with sesame oil, lightly season the pork with salt and pepper, and fry. Add the garlic and mushrooms and fry some more.
When it's done, add the sake and oyster sauce, and fry it all together over a high heat. This goes nicely with rice!

I always make this when I can get my hands on garlic scapes.
Soil often gets stuck in between the garlic scapes, so wash well while peeling them. The garli scapes are best when they've wilted. The mushrooms are tasty when mixed well with the sauce. Leave them in for a while.
