Just mix the ingredients to make these easy cupcakes.
They are mild, sweet and fluffy.

Ingredients: 20-23 chocolate truffle paper cups' worth

Baking powder
1 teaspoon
Vanilla extract (optional)

1. Bring the butter to room temperature and mix it together with the sugar in a bowl.
2. Add the beaten egg and mix. If adding vanilla extract, do so here and mix in.
3. Add the sifted flour and baking powder and mix. You can add the flour without sifting, just mix it into the bowl with a whisk.
4. Pour into small paper cups (80% of the way), and bake for 20 minutes at 180ºC. Check on them after 15 minutes and adjust the oven temperature accordingly.
