Farmhouse Recipe: Taramasalata

Farmhouse Recipe: Taramasalata

A simple taramo salad made by mashed potatoes with tarako (salt cured cod roe). It makes a delicious spread on bread.

Ingredients: 2 servings

200 g
Tarako (salt-cured cod or pollack roe)
1 pair
1 1/2 tablespoons
Lemon juice
Butter (or margarine)
1 tablespoon
To taste
Coarsely ground black pepper
To taste

1. Cut into the membrane of the tarako and scrape out the insides. Mix with lemon juice. This eliminates any fishy flavor.
2. Peel the potatoes and boil from cold water. Cook until a skewer pierces through easily, and drain well.
3. Mash the potato with a potato masher. Add milk and cook while mixing for 1 minute. Add the [A] ingredients, cook and mix for another minute, then turn off the heat.
4. Add the tarako from step 1 and mix. Taste, and add salt if needed.
5. I like to spread this on sliced baguettes.

Story Behind this Recipe

I love taramosalata, so whenever I make mashed potatoes I make extra and mix tarako in half of it.
