These are faux pork cutlets for vegetarians. Except for the main ingredient, the rest is exactly like pork cutlet.
When making tonkatsu for my family, I made myself vegetarian deep-fried tofu as a substitute.
Be sure to thoroughly drain the tofu. Tofu is a bit fragile and doesn't deep fry easily. Since these have a light taste, it's best to use fresh oil.
