This light udon dish is perfect when you don't have much of an appetite. The thickness of the soup makes it easy to eat and the tart umeboshi adds a refreshing touch!

My multi-purpose dashi soy sauce is handy to have stocked, so give it a try. If not, prepare dashi soup with 600 ml of dashi stock, 3 tablespoons each of of soy sauce and mirin, and a little salt.
