Addictive Chicken Tender and Cucumber Salad with Sesame Dressing

Addictive Chicken Tender and Cucumber Salad with Sesame Dressing

This is a bangbang chicken-like salad. It's so delicious!

Ingredients: 2 servings

Chicken tenderloins
3 to 4
1 small
4 tablespoons
Sesame seed paste (or ground sesame)
4 tablespoons
Soy sauce
1 tablespoon
2 tablespoons
1 tablespoon
Toasted sesame seeds
1 tablespoon

1. Put 50 ml each of water and sake in a frying pan and bring to a boil. Add the chicken tenders and steam-cook with a lid on.
2. You can do this in a microwave, but the chicken is more tender done in a frying pan this way.
3. Depending on the size of the chicken pieces, it takes about 5 minutes for them to cook through. If you cook them for too long they'll become tough, so be careful.
4. In the meantime, finely julienne the cucumber. For the best results, slice the cucumber on the diagonal first into thin slices, then julienne.
5. Transfer the chicken to a bowl, and shred up with your hands when cool enough to handle.
6. When the chicken is completely cooled, add the cucumber and all the seasoning ingredients, mix well, and it's done.
7. It's also good if you add some boiled pasta and turn it into a pasta salad!
8. See Recipe ID: 1405053 for the curry flavored version.

Story Behind this Recipe

I wanted to make a bangbangji like dish, so I came up with this. Now it's part of our family's regular rotation.
