As part of my mother's recovery diet, I've been preparing soy bean and hijiki seaweed burgers for her. I made this sauce to go with them by removing the oil and beet sugar from the sauce in this recipe: Recipe ID: 1261037.
Combine the canned tomatoes, onion, and garlic in a pan, cover, and simmer for about 20 minutes until the onion becomes translucent.
Season the mixture with the basil, oregano, rock salt, and balck pepper.
Since there's no sugar or preservatives in this sauce, to preserve it, I poured it into an ice cube tray and stored it in the freezer. When making veggie burgers, let it thaw to the side of the pan.
The cubes look like this when frozen. Store them in tupperware in the freezer to use at any time. It's very convenient.
This is the original recipe: Homemade Pizza Sauce, Recipe ID: 1261037.
I combined this sauce, which I had been storing, with some leftover stir-fried eggplants to make a simple tomato and eggplant pasta.
Story Behind this Recipe
This is part of a menu for a dietary regimen I use for my diabetic mother who is suffering from chronic strokes. The doctor said to admit her to hospital for treatment, but thanks to Yuriko Tojo's natural heath methods and food remedies, my mother is still living strong today. This is a recipe for diabetics and those who have to watch what goes into their blood.
I wanted to use 4 fresh tomatoes but we didn't have any in our fridge so I used canned ones instead.
