Farmhouse Recipe: Spinach en Cocotte

If you dip cheesy spinach in egg yolk it's mild and delicious. This is a standard breakfast dish in our house.

Ingredients: 2 servings

Spinach
200 g
Eggs
2
Bacon
1 slice
Pizza cheese
To taste
Salt and pepper
A small amount

Steps

1. Wash the spinach and boil. Hold the spinach by the leaves and cook the stems first for about 30 seconds....
2. ...then put the whole spinach in and cook for another 30 seconds, so that the stems are cooked for 1 minute and the leaves for 30 seconds.
3. Cool the cooked spinach in cold water and cut into 5 cm pieces. Squeeze out tightly and mix with salt and pepper.
4. Put the spinach into 2 heatproof containers, make a hole in the middle of each and break an egg into each hole.
5. Top with cheese and thinly sliced bacon, and bake in an oven for 7 to 8 minutes.
6. Eat while breaking up the egg yolk.
