Sponge Cake Made with Pancake Mix

I was thinking about baking a sponge cake and realized that I didn't have flour! So I used pancake mix instead. The cake came out moist and fluffy.

Ingredients: 18 cm cake pan

Eggs
2
Pancake mix
100 g
Sugar
40 g (50 g if you like)
Milk
2 tablespoons

Steps

1. Beat the eggs and sugar together.
2. Beat until you can draw a slowly disappearing ribbon on the surface of the mixture.
3. Fold in the pancake mix, then add the milk and gently combine. Try not to break down the foam.
4. Line a cake pan with parchment paper and pour in the batter. Gently drop the cake pan onto a flat surface a few times to get rid of the trapped air in the batter.
5. Bake in the 170℃ oven for about 20 minutes.
6. I made a character cake.
