German Potato Omelette

German Potato Omelette

This is a hearty omelette with sausage and potato.

Ingredients: 2 generous servings

Wiener sausages
4 medium
1 clove
20 g
Grainy mustard
1/2 tablespoon
Lemon juice
1 teaspoon
Black pepper
a small amount
a pinch


1. Wash the potatoes, wrap them individually in plastic wrap and microwave.
2. Microwave the potatoes for 3 to 5 minutes at 500w. Turn them over once, and microwave for an additional 3 to 5 minutes. Take them out when they're soft.
3. Peel the potatoes while they're still hot (with your hands) and cut them up into bite sized pieces. Put a lot of diagonal cuts into the sausages.
4. Heat up the frying pan and melt the butter. Add the finely chopped garlic and saute over medium heat until fragrant.
5. Start by sauteeing the sausages. When they're cooked, add the potatoes and continue cooking.
6. Add the grainy mustard and lemon juice and mix through.
7. Season with black pepper and salt. The German potato is done.
8. In another frying pan (a 20 cm diameter one is recommended) transfer 1 portion of German potato, and pour in 2 beaten eggs.
9. Cook over medium or low-medium heat for 3 to 5 minutes. When the egg is cooked it's done.
10. Repeat steps 8 and 9 to make the other omelette. 2 servings done! It's really hearty.

Story Behind this Recipe

I wanted to add a twist to the usual boring German potato (sauteed potato and sausages), so I turned it into an omelette and it was delicious.
