Meatless Enoki Mushroom and Okara Hamburger Steaks

The enoki mushrooms really work in this dish. This dish contains a lot of dietary fiber and the okara is easy to digest.

Ingredients: For 12 small burgers

Enoki mushrooms
1 pack (200 - 250 g)
Fresh okara
80 g
Onions (minced)
1/2 of a large onion
Egg
1
Panko
3 tablespoons
Nutmeg
1/4 teaspoon
Soy sauce
1 tablespoon
Salt
1/3 teaspoon
Pepper
a pinch
Garlic
1 clove

Steps

1. Mince the enoki mushrooms finely and either do the same to the garlic, or grate. Mix in with the beaten egg and soy sauce.
2. Use your hands to mix all the ingredients together with a pressing motion. Taste and ensure that the flavours have melded.
3. Fry the patties in a frying pan to make healthy burgers. Top with grated daikon and mentsuyu or soy sauce for a refreshing zing.
4. You could also combine cheese and tomato paste to make a rich cheese sauce and pour it on the burgers.
