Mince the enoki mushrooms finely and either do the same to the garlic, or grate. Mix in with the beaten egg and soy sauce.
Use your hands to mix all the ingredients together with a pressing motion. Taste and ensure that the flavours have melded.
Fry the patties in a frying pan to make healthy burgers. Top with grated daikon and mentsuyu or soy sauce for a refreshing zing.
You could also combine cheese and tomato paste to make a rich cheese sauce and pour it on the burgers.

I was going for a dish that was filling but also low in calories.
Because the patties can easily fall apart before they're finished frying, be careful when flipping. The pictured cheese sauce is made with tomato paste, easy melting cheese, a dash of soy sauce and a pinch of salt and pepper.
