Hot Pot with Delicious Chicken Meatballs

Your family will love this! The soup stock is the base of a hot pot commonly eaten by sumo wrestlers. Feel free to adjust the miso and soy sauce, and add anything you want! The most important part though is the chicken meatballs.

Ingredients: 4 servings

Dashi stock
Water
3 cups - 600ml
Salt
1 teaspoon
(If using soy sauce or miso...)
(1 to 2 tablespoons)
Chicken stock granules
1/2 tablespoon
Kombu for dashi stock

Bonito dashi stock (granules)
1/2 teaspoon
Sake
2 tablespoons
Mirin
2 tablespoons
Grated garlic
1 tablespoon
Chicken meatballs
Minced chicken
200 g
Salt
1/2 teaspoon
Sugar
1/4 teaspoon
Pepper
a small amount
Water
2 tablespoons
Eggs
1/4
Katakuriko
2 teaspoons
Sliced carrots
2
Japanese leek
5 cm
Additions:
Thinly sliced pork belly
4 leaves
Napa cabbage
5 big leaves
Japanese leek
1
Mushrooms (enoki, maitake, shiitake)
about 200 g
Carrot
5 cm

Steps

1. Knead those chicken meatball ingredients! Use a food processor if you have one. Finely chop the leek and carrot.
2. When you're done mixing, it should look like this.
3. Put the dashi stock ingredients into an earthenware pot and bring to a boil. Form small meatballs, drop into the pot, and let simmer.
4. Put the other ingredients into the pot. Anything is fine!
5. Once everything is nice and soft, it's time to eat I recommend using the leftovers to make ramen noodles.
