Simmered Beef and Burdock Root (Shigure-ni)

A salty simmered beef and burdock root dish that lets you eat lots of rice with it. Great for bentos too.

Ingredients

Coarsely chopped beef
200 g
Burdock root
1
[A]
Ginger
1 piece (finely julienne)
Water
about 100 ml
Soy sauce
2 tablespoons
Mirin
2 tablespoons
Sake
2 tablespoons
Sugar
1 tablespoon

Steps

1. Cut the beef into bite sized pieces. Scrub the burdock root with a nylon vegetable brush or similar to remove any dirt, and slice very thinly on the diagonal with a vegetable slicer.
2. Put the burdock root and the [A] ingredients in a pan, and simmer over medium heat for 3 minutes. Skim off any scum.
3. Add the beef, and simmer over low heat until there's no moisture left in the pan.
4. It's done when there's no moisture left in the pan. It burns easily so watch it carefully.

I love sweet and salty simmered beef and burdock root. I've been making it with slightly different amounts of seasoning ingredients over some times, and eventually settled on this recipe.
