Luscious Gateau au Chocolat

Ingredients: 18 cm cake pan

Milk chocolate
105 g
Heavy cream
60 g
60 g
Egg yolk
Egg whites
70 g
Cake flour
13 g
Cocoa powder
50 g


1. Sift the flour and cocoa powder together twice, then set aside.
2. Mince the chocolate, add to a bowl, and melt over a hot water bath.
3. Warm heavy cream in the microwave for 20 seconds.
4. Melt the butter for 30 to 40 seconds in the microwave.
5. Add the warm heavy cream to the melted chocolate and lightly mix together.
6. Next add the melted butter and mix well.
7. Add the beaten egg yolk and half of the sugar (about 35 g, give or take) and mix well.
8. Combine everything together.
9. Preheat the oven at 160C for 40 minutes.
10. Whip the egg whites. When it's like the photo, add half of the sugar.
11. When the egg white forms peaks, add the remaining sugar. Beat until the meringue firmly stands even if you flip the bowl upside down.
12. Add the chocolate to the meringue, and cut with batter as if writing the letter "J". Add the sifted powder ingredients.
13. Once you finish mixing, it'll look like this.
14. Pour into the pan and bake in the preheated oven for 30 to 40 minutes. If the top browns, cover with aluminum foil and continue baking.
