Hiroshima-Style Okonomiyaki with Crispy Noodles

Hiroshima-style okonomiyaki, the way my family loves it. The soft and fluffy pancake and the crispy yakisoba noodles are so delicious together! It has lots of vegetables and eggs.

Ingredients: 2 servings

Additions to the batter:
Thinly sliced pork belly
50 g
Yakisoba noodles
1 packet
Japanese leek (or green onion)
1 stalk
For the batter:
☆ Nagaimo
5 cm long piece
☆ Egg
☆ Plain white flour
100 g
☆ Water
100~150 g
☆ Dashi stock (bonito based)
1 teaspoon
Sesame seed oil
To taste
Sauces, toppings, etc.:
Okonomiyaki sauce
To taste
Bonito flakes
To taste
Red pickled ginger
To taste
To taste


1. Chop up the cabbage and green onion or leek. Cut the pork belly slices in half.
2. Great the nagaimo, and mix together with the chopped vegetables from Step 1 and the ☆ ingredients.
3. Heat sesame oil in a frying pan and spread out the pork belly slices and yakisoba noodles (1/2 pack worth).
4. Pour in half of the batter. Break an egg into the middle, put on a lid and steam cook.
5. When the batter has started to firm up, turn it over to cook the other side (make another pancake in the same way).
6. Transfer to serving plates and enjoy with okonomiyaki sauce bonito flakes and other garnishes.
