Coffee and Chocolate Financiers

For Valentine's Day. These are easy to make by just mixing the ingredients. I put an extra piece of chocolate into the chocolate and coffee flavor financier batter.

Ingredients: 10 rose shape molds

70 g
◆Cake flour
35 g
◆Almond flour
30 g
◆Pure cocoa powder
Egg whites (large)
Sugar (light brown sugar)
70 g
1 tablespoon
1 tablespoon
○Instant coffee
1 tablespoon
Chocolate bar
as desired


1. Brown the butter in a small pan and strain. Combine all ◆ ingredients and sift in advance.
2. Whisk egg white in a bowl. Add sugar, honey and mix without creating bubbles.
3. Add the ◆ ingredients in one go and mix like scooping up the mixture.
4. Mix the ○ ingredients, rum, and coffee and microwave to melt. Then add it to the mixture.
5. Add the browned butter to the mixture in 3 portions and mix like scooping up the mixture. Let the dough rest in the refrigerator for 2 hours to one night.
6. Coat the silicone mold with melted mutter. Preheat the oven to 180°C.
7. Pour the dough into the mold using a spoon to be about 70% full. Drop a block of chocolate on each mold and bury the chocolate in the dough so that it won't pop out.
8. Bake in a 180°C oven for 20 minutes. (For our gas oven, I baked for 18 minutes.) Take the cake out of the mold and let cool.
9. Give these a try, too. Pink Rose Financiers with Chocolate inside (Recipe ID: 1357125).
10. Place the financiers in a basket and wrap it up.
11. I divide the financiers, put them in a plastic bag add a paper doily, staple it and seal it with a sticker.

I made this for my friends to give out on Valentine's Day. I added coffee to my favorite chocolate financier and made this recipe.
