Chicken Drumsticks & Daikon Radish Simmered with Ginger

This is a great dish when you have a cold, or if it's chilly.
This is a dish simmered with ginger that will warm you right through.The ginger also raises your metabolism, so it's a good dish when you're on a diet!

Ingredients: 3 servings

Chicken Drumsticks

Carrot

Green Beans

Dashi stock
2.5 cups
Usukuchi soy sauce (if you have it)
3 tablespoons
Sake
3 tablespoons
Mirin
1 tablespoon
Salt
a small amount
Vegetable oil
1 tablespoon
☆Marinade☆
Sake
2 to 3 tablespoons
Salt
to taste

Steps

1. Marinate the drumsticks in the ☆ ingredients for about 15 minutes.
2. Cut the daikon radish into 1.5cm thick round slices. Cut the carrot into bite sized pieces by beveling. Peel and slice the ginger. Cut the green beans in half diagonally.
3. Heat oil in a pot on medium heat. Add the chicken drumsticks and the ginger, and cook.
4. When the chicken has begun to cook, add the daikon radish and carrot. Turn the heat to low and quickly stir-fry while coating with the oil.
5. Add the dashi stock to Step 3 and boil with high heat. Remove the scum.
6. Add the soy sauce, sake, and mirin. Taste it and add salt as necessary to season.
7. Cover with a lid directly placed on the food, lower the heat to medium-low and let simmer for 15-20 minutes. Add the green beans and simmer for another 3-4 minutes.
8. Arrange on a dish and it's done!

I had a cold and wanted to eat a dish that used ginger, and since chicken drumsticks also have collagen, I simmered them with daikon radish and ginger.
