Chicken with Green Onion, Butter and Soy Sauce

The flavour and crunchy texture of the green onions fried in butter and soy sauce give this mild tasting chicken a delicious touch.

Ingredients: 2 servings

Chicken breast

Pepper

Katakuriko
as needed

1 bunch
Garlic - finely chopped
1 clove
Finely chopped ginger
1 thumbnail's worth
Sliced red chili peppers

Sake
1/2 tablespoon
Soy sauce
1 tablespoon
Salt
a small amount
Pepper
a small amount
Butter
15 g
Lemon wedges
as needed

Steps

1. Cut the chicken into bite-sized pieces with an even thickness. Lightly season with salt, pepper and katakuriko.
2. Remove the roots from the green onion and cut into 2 cm lengths.
3. Heat half of the butter in a frying pan and fry the chicken from Step 1. Continue until the chicken is cooked through to the middle, then transfer to a serving plate.
4. Heat the remaining butter in the frying pan, fry the garlic and ginger, then add the green onion. Season with sake, soy sauce and salt and pepper.
5. Top the chicken with the green onion mixture from Step 4, and drizzle on some lemon juice.
6. This is the green onion I used.
7. Soak the onion roots from Step 2 in water, and you can grow your own. Change the water daily.
8. Here are the roots from Step 7, about ten days later. There is enough to use in 2 - 3 servings of miso soup.
