"Börek" is the generic name for Turkish pies.There's various kinds of these pies, but this is the most popular.In Turkey, they use flatbread, but in Japan, I make do with spring roll wrappers.
The baking dish should be about the size of the spring roll wrappers, but to keep the egg mixture from boiling over, it's best to use a rather tall dish.Other than the spinach and cheese, you can also stuff this with fillings such as white cheese & parsley or ground meat & potato.
